Recipes for Chocolate Chip Cookies

For the easy cookies:
• ¾ cup sugar (150 g)
• ¾ cup packed brown sugar (150 g)
• 1 cup butter, softened (226 g)
• 2 large eggs, beaten
• 1 teaspoon vanilla extract
• 2 ¼ cups flour (338 g)
• 1 teaspoon baking soda
• ¾ teaspoon salt
• 2 cups semi sweet chocolate chips (500 ml)
• If desired, 1 cup chopped pecans (250 ml)

Preheat oven to 190°C - 375 °F.

Prepare the easy cookies:
• Mix sugar, brown sugar, butter, vanilla and eggs using an electric mixer.
• Add flour, baking soda, and salt. The dough will be very stiff and sticky.
• Stir in the chocolate chips and pecans of desired.
• Drop dough onto a sheet of baking paper using two table spoons for big cookies or two teaspoons for smaller cookies. I recently tried piping the cookies from a disposable decorating bag and found it to be the easiest and fastest method. The cookies come out much more evenly sized and it takes half the time.
• Make sure to leave 2 inches (5 cm) between each cookie as they will flatten during baking.
• Bake 8 to 10 minutes or until light brown.
• The centers will be soft, let cool completely and then remove from the baking paper.
